Lemon Slice | No Bake

Lemon Slice

This is possibly the easiest and most delicious slice you’ll ever make.  Rich and lemony and best served in small squares, your guests will never believe how simple this is to make.  The recipe makes around 25 squares and will keep, covered, in the refrigerator for several days.

Ingredients
1 packet Marie biscuits
1 cup desiccated coconut
finely grated rind of one small lemon
125 grams melted butter
three quarters can sweetened condensed milk
lemon icing or cream cheese frosting

Line a 17cm by 17cm square cake tin with a large sheet of baking paper.  Crush the biscuits finely, either in a food processor or place biscuits in a plastic bag and crush with a rolling pin until very fine.  Place in a mixing bowl with the coconut and grated lemon rind and mix well.

Mix together the melted butter and condensed milk and add to dry ingredients, mixing well.  If a little dry, add more condensed milk.  Turn the mixture into the cake tin and press down firmly.  Refrigerate until firm, remove the slice from tin by lifting the baking paper and ice generously.  Return to fridge until icing has set and cut into small squares to serve.
